Which Raid For Medium Business Server

I intend to purchase a server with the following setup:

Server 2012 installed onto the hardware with Hyper-V running

2 Virtual servers running and possibly a few virtual win 7 instances required for unique business need of ours.

For now there will be no users' files be stored the server on-site.

So my question is what kind of disks and RAID array should i be using in this kind of setup. I know of RAID 10 being a good shout but even in this situation? I'm concerned that what I'm reading is more applicable to large enterprise business when in fact 2 SAS or even SATA? drives running a RAID 1 might actually be fine for what i need to do?

At a later date i will most likely want to start giving users their own storage space and start storing files onsite, probably no more than 500MB of space per user, so i want a solution that is scalable so that i can just add disks at a later date to increase the total size but still have a decent amount of speed and redundancy.

Any ideas?
