PowerConnect 6248/24 & config

I'm having a bit of trouble wrapping my head around this and hoping the community can help. A bit of background:
Datacenter is the primary location with 5 satellite offices. Currently each satellite is connected via 10Mbit metro ethernet so functionally it's one big LAN and no routing is needed. Original setup used a 16bit subnet and designated the satellite location by the third octet so we have this:

192.168.1.x /16 - Datacenter
192.168.2.x /16 - Office 2
192.168.3.x /16 - Office 3
etc through Office 6

Everything routs through the primary datacenter switch so if it goes down, no satellite office could talk to the any other office.

Our IDS/firewall is 192.168.1.254 and all clients, from all locations access the internet via this route and will need to remain so.

We're in the process of changing over to MPLS-ELAN and each office will be able to talk to one another, but we'll need to use L3 switches. We've purchased and received 1 PowerConnect 6248 for the datacenter and 5 PC 6224's for the satellites. I need to end up with the configuration below.

Datacenter
LAN: 192.168.0.x /23 (510 hosts)
MPLS: 10.0.0.1 /28

Office 2
LAN: 192.168.2.x /24 (254 hosts)
MPLS: 10.0.0.2 /28

Office 3
LAN: 192.168.3.x /24 (254 hosts)
MPLS: 10.0.0.3 /28

Office 4-6 same as above..

I'm having trouble understanding setting up the management VLAN to be on it's own network, why that's necessary (as opposed to just assigning the switch an IP on it's corresponding subnet), and how to setup a VLAN for the rest of the traffic as well as create the routing so they can all talk to one another as well as all have internet access via the gateway at the datacenter (192.168.1.254). I'll need to have remote access to any of the switches via the web console. Is it easier to/should I use OSPF as these have that capability?

It's been many years since I've used T1's and dealt with routing so now I'm kind of a deer in headlights trying to figure out where to start. Help?
