help with server memory

this is a server i should soon have the ability to turn into a VM Host.

the question is, can i buy non eec memory for this? what are the cons to doing so. i understand the difference between eec and non eec ram, but dont want to kill this machine or anything if i choose to spend a few hundred bucks vs a few thousand.
